Coconut - Mango Burfy

Ingredients:
  1. Freshly grated coconut - 1 Bowl
  2. Alphanso mango pulp - 1 cup
  3. Sugar - 1.5 cup
  4. Boiled Potato - 1 medium
  5. Ghee - 2 tsps
  6. Ground Sugar - 5 to 6 tblsps
Directions:
  1. Mix well freshly grated coconut, Alphanso (prefered) mango pulp, Sugar, Grated boiled potato & 1tsp of ghee in the kadai. Keep this mixture aside for about 3 to 4 hrs.
  2. After 3-4 hrs put the kadai on the gas stove & boil the mixture, stiring all the time, till it becomes thick and starts sticking to the sides of kadai.
  3. Then add 1 tbsp. ghee and stir it for about half minute. The mixture should be soft. Now add grounded sugar & mix well.
  4. Pour the mixture into a greased pan so that it spreads evenly. Let it dry for 5-7 minutes and then cut into square/diamond shape pieces.
